Our Crops

Kale: Although not as popular as it should be, Kale is one of the most nutritious plants grown and is delicious as a cooked green or as the primary leaf in a raw salad. Having two uses, extremely high nutrition, long harvest period (often picked in mid winter), and abundant harvest volume, Kale is one of the primary crops grown in this program.

Collards: A more recognized cooked green vegetable, collards are also very nutritious and abundant producers. Can be cooked or eaten raw as a shredded slaw.

Green Beans: Half runners will climb out of reach and produce an abundant crop of green beans over a period of several months.

Tomatoes: Tomatoes are too popular, too expensive, and produce too much in total weight to pass up in our farm. We will be making them available as ripe for typical uses and as green for those who like them fried that way.

Sugarsnap Peas: There is nothing tastier in a salad and of course they can be just eaten raw as a snack. The sugary sweetness will amaze and they produce an abundant harvest over several months. {You eat the entire swollen pod of these}.

Lettuce: Although relatively low in nutrition, lettuce will be grown because: A. It is very popular . . . the number one produce crop in the US in dollars sold. B. It is very fast and easy to grow . . . will utilize space in spring before later crops have filled out.

Onions: Onions are grown because they are used so often and can be grown in the spaces between other plants { see intensive gardening}.
